Does this model works with: - Torchstar E-star 3 series gimbal LED recess light dimmable? - LightingWill 3W LED Recessed Lighting? The wifi works, but no lights turn on.

This switch is a remote switch and incapable of turning a load on and or off unless connected to a master switch which controls the load. Can a remote switch be paired to more than one master to turn on/off multiple lights at the same time?

yes, but that would also make the masters part of the same group as well causing the master switches to also turn on and off the same multiple lights. It would be best to use a scene controller in this instance along with the LC7001 hub. Is the touch dimmer switch backlit? In other words, is there a light in the switch that can be seen at night that helps you locate the switch and/or the dimmer at night?  If so, can it be disabled?

It does have a white locator light led that can be disabled.

Dimmer ADTHMRUW2 needs hot black and a white return, I have 3 singles ganged together each need a black hot and a white return is this right? I was looking for a wiring diagram to check this out. thanks John

Yes, the "remote" dimmers each need a HOT and a NEUTRAL wire to provide the necessary power so they can be paired with their "master" dimmers.

With 120v power to the master dimmer switch for a light and the same for just the remote dimmer switch, it is just a matter of programming a connection between the switches, with no requirement of the Hub or the app, to make a 3-way switch setup. Correct?

Correct, the hub is not required to connect the remote dimmer to the master dimmer. It is only needed to control the devices through the Legrand APP.
