I bought this at my local hardware store. I wanted to hide the cords that go up to my wall mounted TV. I first tried buying pieces and parts to make this work. I was so close, but the power cord to the TV was not long enough once I ran it through the wall. I knew I shouldn't just run an extension cord through the wall. However, that's essentially what this kit does.
It also includes an electrical box to plug your TV and any other devices that need to plug in up high.
My beef with this kit is the poor installation instructions. I'm a mid-level do it yourself person. The instructions are little more than a thin cardboard piece of paper that you can use to trace for cutting the drywall up the wall to install the electrical box and upper level cord transfer piece. As for the piece that gets installed low on the wall to run your cords up to the TV, well, you're nearly on your own. It says to install the mud box, but it doesn't tell you what the mud box is. It's a piece that installs into drywall, to run cords up your wall. It has a note on it that tells you the wall cutout dimensions. A template would have helped.
Be sure to run all your wires and cords through the wall before you screw the top and bottom piece into the wall. Once it's in, it's difficult to run the wires. Of course, I have a wall with batt fiberglass insulation, so that adds difficulty.
Bottom line, I was able to run the power and the HDMI cord with this kit, and I still have a plug up near the TV for a Google or Roku plug in. However I had to intuit what steps to take and when to do what. If I did it again, I would only take 90 minutes to install it. The 30 minute install time on the box is a joke. With knowledge and perfect conditions...maybe. For mortals, double or triple the install time.

I have the iwpk installed in a laundry area and want to use it to plug in a 7 cu ft insignia freezer. The power cord is plugged in to a power surge strip with a few other items (modem, google wifi, etc.) Is this ok?
The UL listing of this product is to have nothing between the Power Inlet and the receptacle feeding the in-wall power kit. Any other use voids the UL listing.

NEC 400.10(11) says that a flexible cord can only be used to power a single receptacle. How can this be code compliant since it is a duplex?
HMM. That's weird, because 400.10 (11) says it's not.

The person that installed it cut the electrical wire (in order to put it through a small hole that wouldn’t let the male plug through) and then jury rigged it. Is this safe?
If the cord was cut in any way it is no longer a safe installation and should be replaced.

In the wall cavity between studs I have ac power line running down left stud and cat5e running down the right stud — Any issue with EMI interference? Also will have AC wire running horizontally that I would be perpendicular with extension cord and hdmi
Interference is always possible with runs in that close of proximity. Every installation is different, and there's not a solid way to know for sure in each instance what may happen. It is recommended that the cables be professionally tested for throughput and crosstalk to verify the cable's integrity and performance.

Can I run the kit through a fire break if I can safely make a hole big enough to run the right angle plug through it?

I need the power cord routed from top to side of fire place. I need a 11 foot length power cord. Do you have at least a 12 ft. or can I modify.
Unfortunately the answer is no to all counts of that question.
Modifying the cord will break the UL listing of this device, effectively making it a non-code compliant installation.

Is it easy to add (fish) additional HDMI cable once the in-wall power kit has already been installed? Are there any videos on how to do it?
No, it is highly recommended that the cables be fished prior to this kit being installed. The design of the outlet for the cables down below makes it difficult to pull through even when a pull string is installed prior
