Will these come with the brackets necessary to mount them? As well as brackets for the switches?

It's my experience that Legrand wall plates come with needed hardware plate which screws onto any standard electric wall box.  The Legrand-provided plate also accommodates the switch or outlet (snaps in) then, once the plate is screwed into the electric wall box, the cover snaps onto the the Legrand-provided plate (as opposed to standard wall plates which screw into the electric wall box). In sum, you have to order the wall plate separately from the receptacle/switch.  But that should be all you need to install in a standard electric wall box.

what cover do I use for adorne pop-out outlet- 1 gang

You can use any adorne 1 Gang wall plate(standard size) with the Popout Outlets. It can not be used with the 1 Gang "Plus" size wall plates.

I'm looking for blank insert for a plate to cover and old phone and an old cable plate.  I want to match our outlets which are graphite plates with magnesium outlets.

You can use two of the blank inserts to cover an opening of a 1 gang adorne wallplate: AABK1G4 - BLANK 1 MODULE GRRAPHITE

If I put 2 half-size paddle switches and 1 nightlight in a 2-gang wall plate, can they be installed with the half-size switches at each end, with the light in the middle [1/2--full --1/2]? Also, can I use the pop-out nightlight for this or just tin-wall?

You would need to use the Half sized nightlights with the half sized switches. The half sized products need to be paired in the same gang. You won't be able to configure the set up with the full nightlight in the middle. You would need the 2 half sized switches in one half of the wall plate and the portable nightlight in the other half of the wall plate.
