Will these devices work with the Apple HomeKit? I am replacing HKRL50 and HKRL60s with these units and would like to have the same experience.
No it does not, and there are no plans to add this support.
For HomeKit, look at the "Radiant with NetAtmo" product line.

What is the range of the RF? Do they all use the same RF? If I want to install 2 of these systems (i.e., 1 LC2201 + 1 LC2203 per system) in the same house to control 2 different lights, is there a way to ensure they don't interfere with each other?
The all use the same RF communication channel, but they each are unique on that channel.
Switch commissioning is a multi-step process.
All switches first get bound to the same HouseID.
Then you create Master/Remote pairings.
The switches do not interfere with each other.
With RFLC switches, each device is assigned a unique DeviceID automatically that ensures that commands sent from one switch only go to the intended remote switches and vice versa.

I understand that the LC2201 (master) needs to be on the same circuit with the controlled light, but does the LC2203 need to be on the same circuit or will any hot + neutral (w/ sufficient V & A) suffice?
You can install the LC2203 on any HOT/NEUTRAL circuit for power to it.
